Salmon cakes are a quick and easy dish that you can make for either breakfast or dinner. My dad made salmon cakes all time for our family. He usually would make them for breakfast with some grits but there were times where we would have them for dinner with rice. This is a great dish that you could make for dinner during the week because it's quick and easy and the patties could be made ahead of time. Check out the recipe and let me know what you think!
Serves 4
2 cans of canned salmon
2 eggs slightly beaten
Half of a small onion finely chopped
Salt and pepper to taste
2 tbsp olive oil
Remove tiny bones from salmon and place in mixing bowl. The bones are soft and can be mashed but I prefer they be removed.
Add finely chopped onion to the salmon and salt and pepper to taste.
Add slightly beaten eggs to salmon mixture.
Once mixed together, form a patty in your hand and set aside.
Heat olive oil over medium oil and fry patties until golden brown.
Server with brown or yellow rice and enjoy!
