Growing up in NC, my mom and dad planted a garden every spring and cucumbers and tomatoes were regularly grown and incorporated into our summer meals. This recipe is my twist on the cucumber salad my mom use to make. She would always use vinegar, salt and pepper but I love this lemon poppyseed dressing because it's sweet and tangy! I normally add this to the menu when I'm hosting BBQs. If you add this salad to your next BBQ, let me know if you love it as much as I do!
Serves 6
1/4 cup of fresh lemon juice
2 tablespoons granulated sugar 2 tablespoon extra light olive oil 1/2 tablespoon poppy seeds 1/2 tablespoon Dijon mustard 1/2 teaspoon minced garlic 1/4 teaspoon salt 1/4 teaspoon onion powder 3 cucumbers, peeled and sliced 1 cup grape tomatoes, halved 1/2 red onion, sliced thin Combine lemon juice, sugar, olive oil, poppy seeds, mustard, garlic, salt, and onion powder in a large bowl. Whisk well until dressing is completely combined. Add cucumbers, tomatoes, and onion to the bowl. Toss to combine. Chill in the refrigerator until you are ready to serve.
