I love all types of food but Mexican food is at the top of my list! This recipe is easy to make and it's a perfect addition for your Mexican Monday rotation. The filling for these enchiladas is so flavorful because the cumin, cayenne pepper and chili powder becomes infused in the ground turkey. The enchiladas are very filling because of the black beans that are added to the mixture. Serve with some Mexican rice and enjoy! Serves 6 1 lb groundturkey 1 can black beans, drained 1 4.5 oz can chopped green chile 1 14.4 oz can diced tomatoes 2 cloves garlic 1/2 of medium onion chopped 1/4 cup chopped cilantro 2 teaspoons of cumin 1/8 tsp chili powder 6 flour tortillas 1 cup of Mexican cheese
2 cans of enchilada sauce 1. Preheat oven at 400 degrees.
2. Season turkey with salt to taste and brown turkey in hot skillet. 3. When the turkey is browned add onion, garlic, black beans, cilantro, green chiles, diced tomatoes, cumin and chili powder. Combine well and simmer on low, covered for 20 minutes. Remove the lid and simmer the mixture for an additional 5-10 minutes to reduce the liquid 4. Prepare a glass baking dish with non-stick spray. Put a small amount of enchilada sauce on the bottom of the dish. Place 1/2 cup turkey mixture into each tortilla and roll it. Place on baking dish seam side down. Top with enchilada sauce and cheese. 5. Cover with aluminum foil and bake in the oven for 20-25 minutes. 6. Serve with some Mexican rice and enjoy!
