This dish is so flavorful and tasty and perfect for your Cinco de Maya fiesta! The star of this dish is a fried tostadas. You can find tostada shells in the grocery store but they taste way more authentic if you fry the corn tortillas yourself. I dried out the corn tortillas in the oven and baked them for about 5-7 mins on 350 degrees. It really helps make the tostadas extremely crispy once they are fried if you bake them for a bit first. Don’t skip this step because it is key to the crispness!
Serves 5
10 Corn Tortillas 1 28 oz can of Refried Beans 1 lb of ground turkey 1 teaspoon of salt
1/2 teaspoon of pepper
1 teaspoon of cumin
1/8 teaspoon of cayenne pepper
1 teaspoon of chili powder
1 teaspoon of paprika
1/4 teaspoon of oregano
1/4 red onion diced 1 tomato diced 1/4 head of lettuce finely lettuce
Shredded Queso Fresco cheese Chopped cilantro 1/2 cup canola oil for frying tortillas
1. Fry the tortillas in oil, or buy store bought
tostadas.2. Cook the ground turkey with all the seasonings. 3. In a separate pot, heat the refried beans and season with salt to taste. 4. To build the tostadas, start by spreading refried beans on the fried tortilla, and then add the ground turkey, queso fresco cheese. lettuce, tomatoes, red onions, and chopped cilantro.
