Chicken Teriyaki Pineapple Bowls


Need a quick and easy recipe that is also impressive in presentation? My recipe for Chicken Teriyaki Pineapple Bowls is not only tasty but also quick and easy. It is also a great date night dish to make at home because of the way it are presented. Presentation is everything even if you are cooking at home. You only need one pineapple cut in half to make this impressive dish. It is a great way to present your food as if you are a dining in a 5 star restaurant. I made these bowls for my husband a few weeks ago and he loved them. I didn't add pineapple to the dish because he doesn't like cooked fruit but you could add a few pieces to the dish. It will give the dish a sweeter taste. I hope you enjoy it as much as we did!

Serves 2

1 pineapple

2 chicken breast, cubed

2 tablespoons of vegetable oil

Salt and pepper to taste

1 teaspoon of garlic powder

1/2 teaspoon of ground ginger

1/2 cup of low sodium soy sauce

3 tablespoons of brown sugar

2 tablespoons of honey

3 tablespoons of rice wine vinegar

2 tablespoons of white cooking wine

1 tablespoon of sesame oil

2 teaspoons minced garlic

2 green onions sliced for garnish

3 cups of broccoli florets, lightly steamed

  1. Cut the pineapple in half and remove the fruit. Set aside.

  2. Season chicken with salt, pepper, garlic powder and ginger.

  3. Heat oil in a skillet or wok and brown chicken. You want to make sure the oil is really hot.

  4. Whisk soy sauce, honey, brown sugar, cooking wine, sesame oil and rice wine vinegar in a bowl. Set aside.

  5. Add garlic to the chicken once the chicken has browned.

  6. Once the garlic is fragrant, add the sauce to the chicken.

  7. Simmer the sauce until it thickens a bit.

  8. Add steamed broccoli and garnish with green onions and sesame seeds.
