Apple Walnut Raisin Cake

We have made it to Day 12 of my Christmas recipes series and the final recipe means so much to me. This Apple Walnut Raisin Cake was a dessert that my mother would make when I was kid especially at Christmas time. I lost my mom in June of this year and while I was going through her things I found the recipe for her apple walnut raisin cake. It was written on the back of a piece of mail that was dated February 1981. I always watched my mother make this cake but didn't learn the recipe like I did her ribs, candied yams, collard greens and biscuits. I am so grateful to have found not only this recipe but a few others that are in her handwriting that I had forgotten about.


I made this cake for the first time last night and the first bite tasted like home. I am always so proud of myself when I completely nail her recipes. The instructions on the back on the envelope weren't very detailed so I made it based on the order I felt like they should go in. If you make this cake this holiday season, I hope you and your family enjoy it. My mother introduced me to cooking and I think that she would be so proud that the life skill that she taught me has now turned into a brand based on my Southern roots and what she showed me so many years ago.


Ingredients to Make Apple Walnut Raisin Cake


1 can of apple pie filling, cut up the apples

2 cups of Swans Down Cake Flour

1 cup of sugar

1 1/2 teaspoon of baking soda

1 teaspoon of salt

3 eggs

2/3 cup of vegetable oil

1 cup of walnuts, chopped

1/2 cup of raisins

1 teaspoon of vanilla

1/4 teaspoon of cinnamon

1/4 teaspoon of nutmeg


Directions to Make Apple Walnut Raisin Cake

  1. Preheat oven to 350F.

  2. Grease a 9x13 Pyrex with Crisco shortening and set aside.

  3. In a sifter, combine cake flour, baking soda and salt and sift into a bowl. Add sugar to the bowl and whisk until combined.

  4. In another bowl or standing mixer, add three eggs and oil and mix for two to three minutes until well combined. Add vanilla, cinnamon and nutmeg and mix for another minute. Add dry ingredients into the wet ingredients and combine.

  5. Add the can of apple pie filling, raisins, walnuts and mix until well combined. Pour into greased Pyrex and bake for 40 minutes. Let cool for 10 minutes and cut into squares.
