These honey jerk chicken tenders are probably the most flavorful dish I have made in the last six months. The combination of savory and sweet was perfection in this dish. My husband is Jamaican and jerk chicken is one of his favorite dishes from his home country. Jerk chicken is normally grilled but I decided I wanted to try to capture the flavor in a fried chicken tender. I used Chilau's seasoning and spice paste in this recipe because I love the flavor that this brand brings to my food. I served these honey jerk chicken tenders with a stuffed sweet potato souffle waffle using my Stuffed Waffle maker. I will spill the tea on that recipe later this week. Flour Mixture
4 cups of flour
2 tablespoons of baking powder
2 tablespoons of Chilau’s Garlic Pepper Seasoning
1 tablespoon of onion powder
1 tablespoon of paprika
Buttermilk Marinade
1 lb of Chicken Tenders
2 tablespoons of Chilau’s Garlic Pepper Seasoning
1 tablespoon of Chilau’s Original Seasoning
2 cups of Buttermilk
2 tablespoons of Chilau’s Red Jerk Fusion Spice Paste
Directions for the Chicken Tenders
Season the chicken tenders with Chilau’s original seasoning and garlic pepper seasoning.
Cover with buttermilk and add Chilau’s Red Jerk Fusion Spice paste and mix well. Allow the chicken to marinate for at least two hours.
In a large bowl, whisk together flour, baking powder, Chilau’s garlic pepper seasoning, onion powder and paprika.
Heat deep fryer to 375 degrees.
To batter the chicken, remove the chicken from the buttermilk mixture and coat the chicken with the flour mixture. Coat the chicken again in the buttermilk mixture and once again in the flour mixture.
Lay chicken on a wire rack to rest before frying.
Fry chicken tenders in oil until golden brown and the tenders float to the top.
Honey Jerk Glaze
1/2 stick of butter
1/2 cup of honey
4 tablespoons of Chilau's Red Jerk Fusion Spice Paste (adjust based on your spice level)
2 tablespoons of lime juice
For the Honey Jerk Glaze
Over medium heat, melt butter in a small saucepan.
Add honey, Chilau’s Red Jerk Fusion Spice Paste, and lime juice. Simmer for 5-7 minutes.
Once your chicken has fried, place in a large bowl and pour the glaze on top of the chicken. Make sure all the chicken is well coated and enjoy!
Ingredients to Make the Sweet Potato Soufflé Waffles
1 1/2 cup of all purpose flour
1/2 cup of sugar 2 teaspoons of baking soda 1/2 teaspoon of salt 1 teaspoon of ground cinnamon 1/2 teaspoon of ground nutmeg
2 cups of buttermilk 2 eggs 4 tablespoons of melted butter 1 cup mashed sweet potato
Chopped pecans
Marshmallows
Directions to Make a Stuffed Sweet Potato Soufflé Waffle
1. In a mixing bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg until well combined.
2. In a separate bowl, whisk together buttermilk, eggs, melted butter, and sweet potato. Add the wet ingredients to the ingredients and stir together until well combined. **If you don’t have a stuffed waffle maker, add chopped pecans and marshmallows to the batter.**
3. Preheat waffle iron. Spray waffle iron with cooking spray, add 1/3 cup of waffle batter, top with pecans and marshmallows and then top with another 1/3 cup of batter. Cook until the outsides of the waffles are lightly browned and cooked through.
4. Serve with honey jerk chicken tenders. Enjoy!
