I think that I am officially obsessed with this Stuffed Waffle Maker. I purchased it a few weeks ago from Amazon and I have made Raspberry Cheesecake Stuffed Waffles, Nutella and Strawberry Stuffed Waffles and tonight I tried a more savory waffle and made Scallion Cornbread Waffles stuffed with Chili. Are you team savory or team sweet? Although, I really enjoyed this waffle, I really liked the sweet versions that I have done in the last few weeks. If you want to give this a try, below are the ingredients that you will need to make the scallion cornbread batter. The recipe for my Easy Three Bean Ground Turkey Chili is here on my blog. The chili paired with the cornbread was delicious!
Ingredients to Make Scallion Cornbread Waffle
1 1/2 cups of flour 1 cup of yellow cornmeal 2 teaspoons of sugar 2 teaspoons of baking powder 1 teaspoon of baking soda 1 tsp of salt 2 cups of buttermilk 2 eggs 6 Tablespoons of melted butter 1 cup of cheddar cheese
2 scallions, sliced thin
Directions to Make Scallion Cornbread Waffle
Whisk together the dry ingredients.
In a smaller bowl, whisk together the buttermilk and eggs.
Add the wet ingredients to the dry, folding together until just combined. Don’t over mix!
Add in the melted butter, cheese and scallions, folding together gently.
Add 1/3 cup of cornbread mixture to the stuffed waffle maker. Top with 1/3 cup of chili. (Click this link my Easy Three Bean Chili recipe) Add cheese-optional.
Top with 1/4 cup of cornbread batter and close lid to waffle maker and flip onto the other side.
Cook for 7 mins until golden brown and remove onto a plate. Top with sour cream and more sliced scallions.
